I just had a look at the sa-learn annoyance and found bug #340334. First
I have to report that on my system, the bug was as least so harmless not
to hang sa-learn --ham or spamassassin -r.
Second, updating perl to 5.8.7-10 fixed it.
This bug can be closed.

I had the same problem. Upgrading local coreutils from testing
(5.2.1-2.1) to unstable (5.93-5) fixed it. So maybe pbuilder just needs
