Man pages are available upstream in the master branch but haven't been
released yet, because I don't have any new features that would warrant a
new release. But you can backport them if you want to have them
available right now. The command line options have not changed.

Man pages are now included upstream, and will be included in the next
release (0.3.4). I don't have any new features right now that would
warrant a new release though, so you may want to include the man pages
as a patch for now, so you don't have to wait for them (the next release

Debian packaging files can be created by using these PHP files:
https://github.com/MaartenBaert/ssr-packages/
They just received some updates to build packages that stick more to
Debian packaging guidelines.
Current release version is 0.3.3 by the way and it works like a charm on
Ubuntu 14.04.
Note that simplescreenrecorder hasbeen succesffuly packaged for
ubuntu: http://ppa.launchpad.net/maarten-baert/simplescreenrecorder/
So there may not be a lot of work to get this packaged for Debian.
