This bug is avoided if you choose the option
No restart required
in the Edit Command dialog.
You can verify this in the file
/etc/gdm/gdm.conf
At the end of the file, you should see something like
CustomCommandNoRestart0=true

I hope this helps:
If I modify the builtin "suspend" command to be /usr/sbin/pm-hibernate
then hibernation works perfectly.
But when I put that into a custom command, the crash occurs.
So customs commands somehow work differently to the built in Suspend
command.

1) add a custom command to gdm login that calls hibernate
path: /usr/sbin/pm-hibernate
give it the label Hibernate
2) restart gdm or reboot to make the label change take effect
3) from the login screen, execute the new Hibernate command
gdm stops.
