Okay, I'll run the installer and issue the commands while the installer
starts to run.
I'm guessing at any time after the boot screen for the installer, if not
tell me at which point it can respond to those commands and I'll save the
output to another keystick.

What I'm asking you is to run the same set of commands, inside the
installer, on the second console for instance. You can for instance
write the output on a mounted keystick.

One more thing!
Also after installation, I have no screen reader in any of the
consoles except the log in console. That means I cannot be in Mate
and open up a console with screen reader, I have to log out of Mate,
and use that console as it's the only console with speech.

The installer doesn't work in this way.
1. No sound is heard during installation after "select a sound card

Having done what you asked, I now see that I probably didn't need to
wait until I had bullseye working on my computer, I probably could
have done this in Slackware which was working.

I'll try that but I'm so tired of installing and reinstating Debian 11 that
I went to bed.
Broken Screen Review
I understand that the screen review using and
has been broken for years, but it still appears in the on screen
documentation of Debian Accessible Text installer UNLESS something else
You may need to run spd-conf as user and make sure espeak or espeak-ng is
pointed at correct sound resources in order for that to work.
Alternatively, fenrir may solve the speech problem for tty1-tty6.
