Try modifying the spec file I submitted yesterday in the Fedora
repositories. It fixed some stuff about building darktable 3.2.1 and
perhaps they can help you in building the darktable master too

packages I needed to install. Can I contribute this documentation somewhere?

libxml2-utils

libpugixml-dev
libjpeg-dev
libglib2.
