NOT INSTALL BOTH. The reason for the error you get is because you
have attempted to install both. Just because they are in package
manager (from different repositories) does not mean you should
install both.
Current flatpak is 20210310.
Uninstall your "regular" copy before installing the flatpak.

conflict with each other. Uninstall chirp, then install
chirp-daily.

Flatpak.
How to I get rid of it? Normal ways of using flatpak to uninstall don't
seem to work, or the current flatpak is the 2020 version.

The latest was in the danplanet repository and not the debian repository but
not sure that is being updated any longer.

I have added the sources for Chirp daily snapshot to Debian Stable.
I install chirp.
I ask chirpw --version and I get:
