If they exist, could someone provide a few precedences wherein the soluble
portion of a transmembrane protein undergoes significant conformational
change after the removal of the transmembrane region?

My two cents: the R-squared for figure 3A is < 9%, therefore only a minor
proportion of the variation (or random noise) in the data was explained by
the fitted model, taking a log scale may reduce that random scatter look
but the fit is essentially the same.
