I agree that would be nice to have a smarter support for em dashes in Lilypond, actually I haven't tested lyrics with that yet. But would like to leave my 2 cents: Not all languages adopt the style of em dashes tight between words. Portuguese stylics recommend having an em dash between two spaces.
