When running command make in gnu-ghostscript, makefile = base/
unixansi.mak
it will not do anything but complaining:
"Make macro expansion too big. Stop."
Seems that there is something in that makefile exceeding the
capabilities of your make program. Is the error message

Is there any way to log error messages that Ghostscript produces?
I’m trying to convert multiple PDFs to TIFFs and I would like to keep
a log of each conversion.
You can try to redirect the output of the commands to some file.
