There is any possibility of restore files directly to system?
Imagine, i've deleted /stuff , and i want restore stuff folder directly to / .
In "where" i've: /bacula/restore/ , I can change this to something else?

Yes.
Once you've done the file selection to restore, you will see three options:
yes/mod/no. If you select "mod" you can use the 9th option to change restore
path.
