FYI: Changing the text-scaling-factor is easy with gsettings:
$ gsettings set org.gnome.desktop.interface text-scaling-factor FACTOR
FACTOR is a float value with high precision
For example:
$ gsettings set org.gnome.desktop.interface text-scaling-factor 0.9
