Hey Eric,
here is the solution I use with the Audigy 2 ZS sound card:
In ~/.asoundrc or asound.conf write only this line
pcm.!default spdif
restart Alsa
Now all the "default sounds" will go to the spdif output.

Analog/Digital Output Jack"
options in the alsamixer.
I will look to the asound.state if there is the same difference.

try this:
echo 'pcm.!default spdif'>~/.asoundrc
Or find in Alsa mixer a setting like "IEC958 Optical Raw"
and make sure it is enabled.

I have an older version of the Creative Audigy (version 2 ZS pro)
this card works out of the box with Debian 4.x and 5.0
Also the SPDIF output works without modifying asoundrc

Make sure you have a Dolby or DTS surround file and try to play it with
mplayer
mplayer -ao alsa:device=spdif -afm hwac3
maybe you have to replace "spdif" with "iec958"
