On reflection, that doesn't seem such a bad tag. Why not just document
this on the wiki after discussion on the tagging list? Then it
should be a supported tag, and Komoot should add it to their routing
algorithm.

On the tagging list, you might want to discuss whether there should be 
grades of impassability...

ford=impassable makes no sense

ford is by definition a passable place across waterway, if 
something is impassable then it is not a ford

if passage across waterway become destroyed: delete that
section of road/cycleway/footway.

(as usual, if really needed it is possible to temporarily use
lifecycle prefixes to prevent bad edits if nothing is left,
or map disused:highway= as long as some remains are visible
