Hinting is different to subpixel rendering, but both are related to antialiasing. But my pedantic comment aside, I think the only real problem here is bad UI design. No text, including the placeholder headings, should be rendered smaller than the user interface font size. Because that may make it too small to read. Indeed this is a feature of GTK4. And GTK4 is a feature of most apps in Ubuntu 24.x. It won't be fixed because that's a political discussion for GTK, not for Ubuntu. But you can avoid the issue by using Ubuntu 22.04 instead, which is supported until at least 2027.
