Seems one of two possibilities to me.
1) The zoom level of the document has changed. This makes things look
larger on screen but has no effect on the print format. Even something that
looks huge on screen, if formatted for A4 would still print correctly on
A4. To adjust zoom level...

I am now on an iMac OS Mojave device
I am extremely concerned about how I can retrieve the dozens of documents I
created on Open Office.

You will need to reinstall OO on the new machine from the Apache site.
Presumably you have been backing up the old machine to an external drive - so
you can migrate those OO files to the new machine from that backup drive.
