I figured out what was going on; The RPMs for sane-1.0.7 had not fully uninstalled and were getting in the way of the new version. Completely removing all traces of sane-1.0.7 and reinstalling sane-1.0.11 fixed things, and it now works great (in fact better than it ever did under windows).
