The easiest way is probably to simply do a global search+replace of \left( and \right) on the file:-)
The much harder way is to create a clone, then track down the method for the latex code (try M._latex_??, where M is your matrix), edit it and rebuild Sage using "sage -b". If you think your request is of general interest, you could also ask on sage-devel if having a square bracket option is something others would want. Maybe someone will implement it!
