I sure would. I think most people who want to access the server remotely will want to access it from any address/hostname; I don't think there are many people who have multiple network interfaces and want the Sage server to listen on only one of them...and such people can probably figure out all this stuff themselves. :) Another consideration is that I think it's easier to have the server listen to everything and use a firewall to selectively block access.
