Is that true? If an updated conway-polynomials package is needed on Conda the thing to do would be to report that to https://github.com/conda-forge/sagemath-db-conway-polynomials-feedstock I'm sure someone (perhaps even me) could update it. It's not that old though and I'm a little confused that conway-polynomials would cause building Sage to fail.
