The latest Docker image for Sage is based on Sage 7.4. The old one
based on 6.x has been deleted so I'm not sure how you're still seeing
it. Use
$ docker pull sagemath/sagemath
to get the latest.
I'll add an image for Sage 7.5 shortly. The only reason I haven't is
there were some test failures of Sage 7.5 in the image, and my
automated build tools don't automatically push new images if the tests
fail :/
