but i guess, you would switch to unprefixed versions, if they worked as
well.

in debian one would probably postfix libraries linked against mpir instead
of gmp with -mpir, like for example libmpfr-mpir, libmpfi-mpir or
libpari-mpir. this is not difficult, does not require a distro-wide switch
and is only indirectly related to sage. providing mpir versions is
something we/debian should do after sage is packaged and working (and
there is an indication to do so).
