I can't see why not.   I can't guarantee 5.1 would build, but
certainly many previous versions of Sage built on non-desktop minimal
installs of Ubuntu.

The jmol included in Sage is a pre-built binary.  It is not built from
source.  To build it requires having the JDK, at least.
