Thanks Rob and Reg. Turns out that I was missing texlive-latex-extra.
LaTeX cells render fine now with these packages installed:
$ dpkg -l|grep texlive|grep ^ii|awk '{print $2}'|sort

texlive-fonts-extra
texlive-fonts-extra-doc
