The default value is 1800 seconds.  It's defined in SAGE_ROOT/local/
bin/sage-doctest:

    # the timeout value for long doctests: 30 minutes (in seconds)
    TIMEOUT_LONG = 30 * 60
else:
    TIMEOUT_LONG = float(TIMEOUT_LONG)
