I would like to see a Cython workshop.  (I would be happy to help
organize a Sage Days Cython workshop at UC Berkeley.)

There are plenty of proposals on the Cython wiki:
http://wiki.cython.org/enhancements
In particular, I would love to see continued improvement in Cython's
support for wrapping existing C/C++/Fortran libraries.  Cython is
becoming increasingly important not only for Sage, but for both NumPy
and SciPy.
