Because of bad experiences, I have switched to doing screencast talks - i.e. I do the "interactive" stuff in advance. I'm not sure what is available on linux for this, but on the mac I use iShowU, which is commercial but only about $25 and cheerfully written and maintained by one guy. Of course doing it truly interactively gives one more flexibility so I usually have a notebook going in the background if I need it.
