You're right, that is not exactly what SageTeX does now. At the moment, everything is geared towards getting things into the LaTeX output. Your idea is similar, though -- but again, basically backwards! -- to something I've been thinking been adding to SageTeX: a "sagesession" environment, in which you type in the commands, and the document has the commands and their output, exactly as if one had run "sage" at a prompt and done a session with Sage. It would/should be easy to add something to SageTeX that would just output the Sage commands into the LaTeX output, but would, when converting to worksheets, output a live cell.
