Unfortunately "sync" doesn't support -e yet. Here it's explained why:

I'm about to add some sort of gpg support for sync in near future.
Recursive 'put' in 0.9.9 will have it as well. Also note that using
HTTPS transfer will protect the files at least during the upload.
