i`m sure that if you use ext3/4 as the destination filesystem (instead of hfs+) and also access that via netatalk the same way as you access the source, then all is fine again.
i think it`s the transition from ext4->hfs+ and the dbehaviour of netatalk accessing and handling metadata on ext4 and hfs+ differently
you may take a look at http://netatalk.sourceforge.net/3.1/htmldocs/afp.conf.5.html to see how netatalk handles metadata different on different filesystem, so maybe params "appledouble", "ea", "convert appledouble" are interesting for you.
maybe there are others, i did not every use netatalk yet...
so, indeed no rsync issue but a apple/netatalk specific one...

Look inside the .AppleDouble folder and tou will find the resource forks that hold the main part of the font data.
Not a 'problem' with netatalk, but just how netatalk works so that it can represent apple files on non-apple filesystems.
If you confirm the data all matches, this will prove rsync is working properly.

hmmmmm never think about this, it is 0 kb also on source from command line of my ubuntu server

I always thought problem relating to rsync but rsync is doing well job exactly copy what it found in source to destination.
Just to check i connect to shared folder of my ubuntu server that i use for job and enter from terminal (command line of mac os X) and view ls -la for same folder, it also show what i get from linux command line. Here i copy these information as well
