+- Put one-of-many choices into <val1|val2|val3> lists

It seems like the common way to avoid listing all available choices is to use a 
placeholder, much like the one in SYNOPSIS for general options, e.g. 
`--compress=method` and then list the supported values for `method`.

That said, I do like listing the options with `<` and `>` directly (unless 
there's a lot of them), too :smile:
