There's been a bug open about this for some time (http://bugzilla.gnome.org/show_bug.cgi?id=119406 - three years old..). I don't think it would be particularly difficult to implement, but it's got a few tricky aspects to it. Where and how is the column order stored? Does it affect only the library, or all sources? Can different sources have different column orders? If playlists can have their own column orders, where is the state stored? How does the user restore the default column order?
