In /etc/sysconfig/rhn/  there is a config file for up2date named
"up2date"

Edit that file and read the comments. 
You can tell it to download and install kernel updates, but not remove
the old kernel packages and not change your grub or lilo.
That is probably what you want.

BTW, it does add the new kernel to grub and lilo, but it doesn't change
your default boot kernel.
