My /etc/fstab entry for my windows partition looks like this and works just fine:
/dev/hda1 /mnt/vfat vfat user,owner,exec,dev,suid,rw,conv=auto,uid=500,gid=500,auto 0 0 Check your boot log to be sure your windows partition is hda1...which is typical. Make a backup of your /etc/fstab before you do any of this. Get it wrong, and you'll need it :) See man mount and man fstab for details on the above entry.
