Can I know in what sense the red hat install of apache is weird ?

Hmm ... http://www.apache.org comes to mind.  I personally don't think
it's very helpful to try to learn the weird Red Hat way of installing
and configuring Apache.  You'll learn a lot from building your own,
and by reading a stock (not Red Hat) httpd.conf for starters.

You might find the O'Reilly Apache reference useful, but it's not 
needed for most things.
