Use Samba (www.samba.org) for disk sharing.  They have some Windows NT PDC 
functionality but it was not complete last time I checked.

For DHCP there should be a DHCP server on your Linux install CD called dhcpd.

If you want a very easy to use, web based administration tool that can help 
with Samba and DHCP check out Webmin (www.webmin.com) and stay away from that 
evil linuxconf program <shudder>
