If you're going to support a large number of users, you'll probably want
to select some software that isn't distributed with Red Hat.

Qmail is very secure, and very fast.  It's also a load easier to
configure and maintain than sendmail.  (Others may recommend postfix,
but either would make a better choice than sendmail...).  Maildirs also
have some distinct advantages over mbox files.

Courier-IMAP is very standards compliant, very small and very fast.  It
is also engineered around Maildirs.  It will require the use of either
qmail or postfix.  With only one user (me) on my server, I noticed that
it's quite a bit faster than UW-IMAP.  I recommend it a lot.

For webmail, I recommend TWIG.  I only recently started using it, but I
was amazed at it's features.  It's a full groupware application, with
support for (imap) mail, news, bookmarks, calendar, todo, and contacts. 
I've gone so far as to consider completely replacing netscape Mail with
TWIG.  :)
