This is just a wild guess, but if you originally installed X so that Gnome
comes up automatically, rather than having to type startx manually, 
them maybe the ctrl-alt-backspc keystroke just re-loads it.   If you
want the functiality to kill it completely, then setup to that you boot
to a linux prompt, then type startx to start X.   Then, when you kill it,
it stays killed.   Just a guess.......
