I'd suggest taking a look at http://www.qmailtoaster.com/

The 'toaster' bundles everything you need from SMTP, POP, IMAP for one or multiple domains, to mailing lists, autoresponders and mrtg reporting. There are web interfaces for administration and user side. Installation is documented pretty clearly so it's a turnkey process.

I've been using qmail and it's add ons for a long time and had been building it by hand. Then I had an emergency and had to bring up a new RH9 mail server before lunch. I decided to try this toaster and it just worked. By lunch I had mail for a dozen domains, SSL pop and imap, authenticated smtp, spam and virus filters, etc.

If you really just need IMAP, take a look at http://www.inter7.com/ Look under the FREE SOFTWARE menu item for courier-imap.
