If I start the sendmail daemon everything is working fine, but I don't
want to have a running sendmail daemon on every of my linux servers.

By default, sendmail only listens on 127.0.0.1, so it is not vulnerable to network attacks. If you plan to have you boxes send status reports or whatever, via email, then you should run sendmail as a daemon so that it can retry failed deliveries.
