That should have been:
PS1="[EMAIL PROTECTED]"; export PS1
When you set the value, you don't include the $.

It is set in /etc/bashrc, so as long as you don't set it anywhere else,
and you have not edited /etc/bashrc, you should be back to normal when
you log in next time.
