check out the dns howto.../usr/doc/HOWTO/DNS-HOWTO -- it talks about
setting up a caching name server, but changing that to a nameserver for a
domain is nothing once it's set up.

basically, the files you're worried about are /etc/named.boot (lists
config info for named -- directory, hints file(aka cache -- but not the
real one..a fellow sysadmin once nuked the named.ca file in an attempt and
it took our system analyst about ten minutes to figure out why it wasn't
resolving after the next HUP) and the zones it's responsible for), the db
files in the directory (in RHL I believe it defaults to
/var/named/named.local, plus whatever you add) and then /etc/resolv.conf
(to tell the machine to use itself as a name server, if you like) et
cetera...it's pretty well covered in the HOWTO
