of course theres multiple ways to go about doing this ..but what i'd
do..

(shutdown samba)

rename old logs to whatever you want

touch new logs, and be sure the permissions/ownership on them is the
same as the old logs.

usually you can just delete them, but sometimes the log files need to
be owned by a non-root user, and they may not be able to write to
the directory/file if they lack the right permissions. samba has run
as root on every system i've seen so this probably won't be an issue.
