The function that you want to modify is echo_success() in the /etc/init.d/functions file. Change the "OK" on line 308 (at least it's 308 in my functions file), to "done". Keep in mind, however, that that this will change all the "[OK]"'s to "[done]"'s, not just the "[OK]" for the network startup.
