I haven't done this, but it sounds like it should work.  Assuming Linux
detects it during boot, it should assign whatever values you have defined
in /etc/sysconfig/network-scripts/ifcfg-eth[012...] to the new NIC and its
hardware address.  Try it and see!
Of course, I could be wrong... :)
