They are Red Hat addon's, bug fixes, and other things.

None at all.

Me neither.  They add on new features, and other stuff.  It
allows Red Hat to have a nice unified kernel which makes support
much easier, and also provides some cutting edge - but non
official features to the kernel for customers that need them.

Lots of patches out there are useful, and solid, but are not
included in the main kernel for various reasons.  For example, I
am using ReiserFS now, and many others are as well.  It is not a
standard kernel feature though.  If Red Hat were to support it,
they'd have to patch it in themselves.

You can replace the kernel with whatever you like, either a raw
official one, or your own customized one.
