When I first installed Linux, the book said "don't do stuff as root."

Paranoia.
Security concerns.

Lots of packages are broken.

Do you want to install that shiny new sendmail package you're building? Only 
last week an rpm I tried to build tried to install itself on my running system.

Do you want to pack stuff from your running system into that rpm you're 
building? That happens too - unfortunately building as non-root doesn't avoid 
that problem, but the fact it happens illustrates the need to take care.
