I remember a trick I read about years ago, but don't know where;-(
You can, with a wilddard mx record in your DNS, direct sendmails (and,
presumably other MTAs) to go through your relay.
What I don't recall is precisely how to configure it. If someone else can
complete my knowledge, thus should do (most of) what you want.
