When using the 2.2.12-20 kernel from RedHat 6.1, or the 2.2.12-23 from rawhide, the AmiRAID driver is present in modular form. If the module is used from an initrd, the module fails to see logical volumes beyond the first. Compiling the AmiRAID driver into the kernel resolves the problem.
