Favourite Meatloaf (t&t)

From: PeakMarket.com (from Winnipeg, Manitoba, Canada - 8/2/2008)

Bernice's review: I made this for supper last night in my newest toy, my
Oster Convection Oven. It came out really good! I also hardly changed a
thing in the recipe - except I used 1/2 cup of bread crumbs instead of crushed
soda crackers. As a note, I cut the meatloaf into 6 servings instead of the
suggested 4 servings - most people would prefer the 4 I think.

Ingredients:
1 lb (500 g) lean ground beef
1 onion, chopped
1/2 cup (125 ml) milk
1 egg, beaten
8 soda crackers, crushed (I used 1/2 cup bread crumbs)
salt & pepper to taste (personally I used 1/2 teaspoon salt & 1/4 teaspoon
pepper)
1/4 cup (50 ml) ketchup
1/4 cup (50 ml) water
1 teaspoon (5 ml) dry mustard
1/2 cup (125 ml) brown sugar

Directions:
1. In a large bowl combine ground beef, onion, milk, egg, crackers, salt &
pepper; mix well.
2. Place the prepared meatloaf in a large loaf pan. Make a slight dent in
the middle of the loaf.
3. In a small bowl combine the ketchup, water, mustard & brown sugar. Once
mixed, pour over the meatloaf. Bake in a preheated oven of 350ºF (180ºC)
for 1 hour. Drain excess liquid before serving.

Serves 4
