Soft Oatmeal Sugar Cookies 1 c. sugar 1/2 c. melted butter 1 egg 2 tsp vanilla extract 1/2 c. milk 1-1/4 c. all-purpose flour 1 tsp baking powder 1/2 tsp ground cinnamon 1/4 tsp salt 1 c. old-fashioned rolled oats 1/4 c. raisins Confectioners' sugar
Preheat oven to dg350. Lightly grease 2 baking sheets. In large bowl with electric mixer at medium speed, beat sugar, butter, egg and vanilla until well-blended. Beat in milk, then flour, baking powder, cinnamon and salt until a stiff batter forms. Fold in oats and raisins. Drop by heaping measuring tablespoonfuls 3 inches apart on baking sheets. Bake 18 to 20 minutes, until edges are golden brown. Cool 2 minutes on baking sheets then remove to wire racks to cool completely. Cookies are best if eaten within a day or two of baking. Store in an airtight container at room temperature. May dust with Confectioners' sugar if desired. Yield 18 to 20 cookies.
